Mother pho’s best

One of the luxuries of [temporarily] living at home is a scrumptious home-cooked meal. I buy the staple items like frozen chicken, eggs & milk. Mom buys the fancy stuff like Gorgonzola cheese, Greek strawberry yogurt, focaccia bread, and fabulous pho broth & noodles. She then orchestrates the ingredients into a fabulous feast.

Pho (fo, fah, or fuh depending on who you ask) always a delight no matter how hot or cold it is outside. She makes an absolutely *delicious* chicken pho noodle soup with plenty of ways to dress it up: limes, basil, hot sauce, & jalapeΓ±os. I don’t enjoy chicken pho from a restaurant, so I was really surprised that I liked it {ok, not really that surprised since Mom made it}.

Soup base, rice noodles, 2 chicken breasts, basil, & lime, for less than $10 fills up a 4qt Crockpot. It lasts us most of the work week.
